Montreal Bagels


As you may or may not know, I am currently based in Vancouver, Canada.


Curious to discover more about Canadian bread culture, I have been doing a lot of research and happily stumbled upon the Montreal Bagel.


These delectable bagels are made with an egg and honey dough and even contain a smidge of maple syrup!! How very Canadian!

They are boiled in honey-sweetened water prior to being rolled in sesame or poppy seeds and then baked until gloriously golden and beautiful

Although authentic Montreal bagels are baked in wood fired ovens, I obviously had to make do with my domestic oven

I used the following ingredients:


750g AP or white bread flour

350g warm water

10g instant yeast

3tsp maple syrup

11g salt

1 egg

1 egg yolk

55g oil

150g honey

40g honey (in a shallow pot of boiling water)

Sesame and Poppy seeds for topping.

Allow the dough to bulk ferment for 2hrs before dividing into 80g pieces. (Note: I found the final bagels a tad small and will probably use 100g pieces of dough next time).

Shape the pieces of dough into rings and allow them to rise for 30 minutes before boiling them in the honey water - about half a minute on each side. Remove from water, roll in seeds and place on a baking sheet lined with baking paper. Bake at 450 °F / 232 °C until golden brown.

Needless to say, the kitchen smelled incredible and half the bagels are already gone!
